Tutti-Frutti Ice Cream - Vegan

My younger daughter made this for our local 4H competition for Chef 4H.

 

It went over big and won her 1st place in the senior 1 division. It is

very delicious and soooooo healthy and dairy free.

Tutti-Frutti " Ice Cream " - Vegan

adapted from Newstart Cookbook

 

2 c. Pineapple Juice

1 - 13.5 oz can of Coconut Milk

3/4 c. Orange Juice Concentrate(thawed)

3/4 c. clean, raw cashews or soy milk powder

3 c. unsweetened, crushed pineapple

3 large bananas

1 t. vanilla

1/4 t. salt

1 c. unsweetend coconut flakes

1/8 t. coconut extract

 

Mix together in Vita-Mix or food processor until smooth(but coconut flakes

are still have a little chewiness in the mixture) Pour into an ice cream

freezer and follow the directions for dairy ice cream.

 

Per 1/2 c. serving 166 calories 2 g. protein 24.3 Carbohydrates 7.9 fat 71

mg. sodium 177 mg calcium ; 0 mg Cholesterol

Another bravo! Yay!

I want to get an icecream maker before the

summer heat begins. There are so many

good recipes to try. Thanks for sharing. :)

You know I've avoided buying one and thought they would be a pain to use with

trying to fit the ice and rock salt in around the container that holds the ice

cream mixture, but it was no problem at all........ I just bought this one and

we had it made in 25 minutes........ I'm looking forward to many batches of

homemade sorbet and ice cream now..

We got the ice cream maker attachment free when we bought my kitchen aid . I

can't wait to try soy ice cream! We already have perfected traditional ice

cream. I'll keep you posted!
