Lemon Chippers

 

I got some candy for Valentine's Day that had

chocolate covered lemon cream candy. I had never

considered that combination, but it was really good.

I thought it would be a good combination for cookies.

Here's the recipe I came up with. These cookies had a

nice golden color on the bottom after 13 minutes, but

the tops were kind of pale. THey tasted fine and were

a bit crunchy. This recipe made about 5 dozen.

 

3/4 cup butter (1 1/2 sticks), softened

1 cup sugar

1 teaspoons lemon extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

2 cups mini semi-sweet chocolate chips

 

Preheat oven to 325 degrees.

 

Cream butter with sugar in a large mixing bowl until

light and fluffy. Blend in eggs and lemon extract.

Set aside. Combine flour, baking soda, and salt in a

small bowl. Gradually mix into butter mixture. Stir

in chocolate chips. Drop by teaspoonfuls onto an

ungreased baking sheet. Bake for 12 to 15 minutes.

Cool on baking hseet for a few minutes, then remove

and place on a wire rack to cool completely.

hmmmmmmmmmmmmmmmmmm. I grew up in S. California and was raised having See's

Candy at holidays and they had lemon creams with chocolate. I will say up-front

that I don't really care for sweets that are chocolate and fruit together but I

loved the lemon creams with chocolate.

Usually, dessert recipes aren't the same when I make them vegan but this one

looks like is could work out well. Ooooooooooh gotta try it! THANX!

I love citrus + chocolate. I recently bought some

lemon ginger chocolate chip cookies that might have

been the best cookie I've ever tasted.
