[recipe request] Green Beans, please!

I found a great deal on fresh yummy green beans

at the market tonight, and I bought a 2lb. bag.

I have a good recipe that I plan to make that will

use up one pound, but I would love to get some

more ideas. Please share some of your favorite

recipes that call for fresh green beans. Thank you!

i like to use fresh green beans in thai curries. i take a can of

red (or green) curry paste and mix it with a can of coconut milk.

I add fresh green beans (or sometimes frozen) and other veggies

(eggplant, onions, squash, etc...) and cook until everything is

tender. Chunks of fried tofu is great added to the curry mix too

(even just tofu and green beans is great). Ever since I've

learned how to fry tofu, I've been using it in everything.

Susie tell me how you fry your tofu. Do you freeze it first and press it and

then cut into chunks? Do you saute, flipping it from side to side or deep fry

it?

One way we enjoy them is to boil them until tender. Drain and put in a hot

frying pan with some melted Smart Balance Light spread. Mince several cloves of

fresh garlic over it and stir fry it until the green beans are lightly cripsy.

Sprinkle withe some coarsly ground sea salt.

 

It is so yummy. We do this with fresh, frozen or canned green beans.

I've shared this recipe from the Kraft website before. It's one our

family dearly loves. We love garlic so I mince a couple of cloves and

add that too. Enjoy!

 

 

 

Green Beans and Tomatoes Italian

 

Prep Time: 10 min

Total Time: 10 min

Makes: 6 servings, 3/4 cup each

 

 

3 cups hot cooked green beans (1 lb.)

2 plum tomatoes, cut into thin wedges

2 Tbsp. chopped fresh basil

1/4 cup KRAFT LIGHT DONE RIGHT! House Italian Reduced Fat Dressing

 

 

 

TOSS all ingredients in large bowl.

I have never tried frying the green beans before. :)

I will steam them for a little while, then throw them into a skillet with a bit

of sesame oil, a little bit of salt and pepper, fresh crushed garlic and chili

pepper flakes. I eat them with rice. Easy and delicious.

I to Vegetarian Times and saw a similar recipe that prompted me to do

the above. They have some great recipes for green beans here:
