I have a good recipe that I plan to make that will use up one pound, but I would love to get some more ideas. Please share some of your favorite recipes that call for fresh green beans. Guest guest Posted April 24, 2008 Report Share Posted April 24, 2008 i like to use fresh green beans in thai curries. i take a can of red (or green) curry paste and mix it with a can of coconut milk. I add fresh green beans (or sometimes frozen) and other veggies (eggplant, onions, squash, etc...) and cook until everything is tender. Chunks of fried tofu is great added to the curry mix too (even just tofu and green beans is great). Guest guest Posted April 24, 2008 Report Share Posted April 24, 2008 One way we enjoy them is to boil them until tender. Drain and put in a hot frying pan with some melted Smart Balance Light spread. Mince several cloves of fresh garlic over it and stir fry it until the green beans are lightly cripsy. Sprinkle withe some coarsly ground sea salt. It is so yummy. We love garlic so I mince a couple of cloves and add that too. Enjoy! Guest guest Posted April 25, 2008 Report Share Posted April 25, 2008 I will steam them for a little while, then throw them into a skillet with a bit of sesame oil, a little bit of salt and pepper, fresh crushed garlic and chili pepper flakes. I eat them with rice. Easy and delicious. I to Vegetarian Times and saw a similar recipe that prompted me to do the above.
