What's for dinner tonight?

Just curious what everyone is making at their

place for dinner tonight? I am still deciding if

I am going to make some easy veg chili with

canned beans and soyrizo, or if I will just do

pasta with salad.

I had whole wheat pitas, which you cut in half to open, but ended up eating both

halves as the calories were so small. So, I put 2T hummus 3 pepper flavor

inside each, lettuce, diced maters, onions, cucumber, carrots, and sprouted

seeds and Veggie Shreds, cheddar flavor. There was a little overage of fillings

that wouldn't fit in the pitas, so I just put 1/8C of a seed/nut mix on them and

a tsp of safllower oil and a squirt of lime and ate it like a little salad. I

wanted a little more protein, so I had some left over beans and just ate a 1/2C

of them, to complete my nutrional needs. All very delicious :)

i made veggie quesadillas with leftover grilled veggies (red & green bell

peppers, onions, yellow & zucchini squash, mushrooms, and carrots) and cheese. 

I served the quesadillas with avocado cilantro cream and pico de gallo.  Was

pretty good for leftovers.

We had beet patties and mashed potatoes with tehina. The recipes were

from a newspaper article on Samaritan cooking. I'll try to post them

later.

Last night I made eggplant pomodoro over spaghetti squash and black bean

brownies. That's

right-- black bean brownies.

Kitchen sink spaghetti

Tomatoes

Onion

Garlic

Mushrooms

Peppers (roasted red)

small Japanese eggplant

small zucchini squash

basil, oregano, rosemary, parsley, bay

Black and Kalamata olives

 

Garlic bread

 

Simple peach sorbet

16 ounces canned peaches, frozen

whir in processor or blender till creamy, refreeze. Serve.

I'd love to see the recipe for the beet patties.

I don't like beets, but I want to find a way to

eat them that I might enjoy since they are

so good for us.

 

Last night I made pasta with a four cheese sauce

and had roasted green beans, too.

 

Tonight I want to make the soyrizo chili since

it is rainy and going to be much cooler weather.

I may have leftovers tonight. I have a couple things in my fridge that needs to

be eaten up, like the spaghetti with the Nate's meatless meatballs in them.
