Guest guest Posted April 28, 2008 Report Share Posted April 28, 2008 I had whole wheat pitas, which you cut in half to open, but ended up eating both halves as the calories were so small. So, I put 2T hummus 3 pepper flavor inside each, lettuce, diced maters, onions, cucumber, carrots, and sprouted seeds and Veggie Shreds, cheddar flavor. There was a little overage of fillings that wouldn't fit in the pitas, so I just put 1/8C of a seed/nut mix on them and a tsp of safllower oil and a squirt of lime and ate it like a little salad. I wanted a little more protein, so I had some left over beans and just ate a 1/2C of them, to complete my nutrional needs. Guest guest Posted April 28, 2008 Report Share Posted April 28, 2008 i made veggie quesadillas with leftover grilled veggies (red & green bell peppers, onions, yellow & zucchini squash, mushrooms, and carrots) and cheese. I served the quesadillas with avocado cilantro cream and pico de gallo. I don't like beets, but I want to find a way to eat them that I might enjoy since they are so good for us. Last night I made pasta with a four cheese sauce and had roasted green beans, too.
