The chili sauce I grew up with is nothing like hot sauce. It was more like catsup with relish. It was more sweet than spicy, but more spicy than catsup. Thicker than catsup and with chunks of some kind of relish in it. My mother always bought the Heinz brand, but there were many similar brands and types used by others in the family. I mean, I buy tomato sauce and make chili, there's canned chili, there's 'chili' beans, but chili sauce....just don't know what to think that is! This brings up a connected thought... did you know that in the aisle that has things like Dinty Moore Beef Stew at Krogers, they have Hormel Chili *Vegetarian*? But anyway, this recipe doesn't call for a lot of the chili sauce; I think it is just a smidge. You could use catsup, hot sauce, chili relish, BBQ sauce whatever you enjoy. Since the recipe calls for a 1/4 cup, I would suggest you buy a mild one to start out until you are certain how much spice you like. You could even use BBQ sauce or whatever you enjoy the flavor of. I can't imagine putting a 1/4 C on that stuff in something! Maybe a tablespoon! Think it would be best to put out a 1/4 C then add it a little at a time to see where I would stop! Ya never know Well, that's what I have always used in this recipe for chili sauce, but as you can read from the other posts, in different regions chili sauce is more of a relish type thing. I don't use an extremely hot chili sauce and when combined with the water, lentils, kidney beans, wheat germ, pecans and all, then divided into 4 patties, it doesn't seem so spicy to my palate, but all tastes are different. You can use what you like in its place or even use a mild taco chili sauce or BBQ sauce instead. I often adjust recipes to taste. This recipe is very flexible in that way. I've not made it, but it gives you an idea of what kind of taste it would have.
