Sissy Zucchini-Curry Stew 2 zucchini 1 onion 1 or 2 garlic cloves 3 tbls butter or marg 1 tablespoon curry powder (I use hot) 1 15 oz can tomatoes 3 tablespoons grated or flakes coconut, toasted in hot dry skillet 2 tablespoons mustard seed, toasted in a hot dry skillet Take zucchinis and peel or leave unpeeled, and chop into decent sized chunnks.. Mince onion and garlic. Crush up tomatoes together with the juice. Saute onion and garlic in the butter on a low flame. Stir in curry powder. Add tomato puree and cook until it thickens a bit. Add toasted coconut into the tomato puree. Add diced zucchini and simmer for about 15 minutes until tender. Sprinkle toasted mustard seeds over the stew.
