I've got a quart bottle of Braggs that I add to just about

everything. I dilute it in water to add to things calling for veggie

broth, as the veggie broth I like comes in quart containers and it's

hard for me to use up that much once it's opened. I suppose you could

do the same thing with soy sauce, if you can't find Braggs.

What ratio of Braggs to water do you use? I've never thought to use it as a

substitute for vegetable broth, but I sure do like the stuff!

Have you ever tried Imagine brand No-chicken broth?

It is really good and doesn't taste like the typical

vegetable broth. You might look for that.

You could try some miso mix. It's a Japanese soy based paste that you

mix with water to make miso soup, but I'm sure you could use it

similarly to broth in other vegetable soups. I've added things besides

mushrooms, green onions, and tofu to miso, so I don't see why you

couldn't use miso as a base for some soups, though you may want to try

it plain first if you haven't before and add a few things to see what

it goes well with. You should be able to find it at an Asian market of

some kind, sometimes in the refrigerated section. Check the label for

fish ingredients, to be sure, though I've yet to come across miso with

fish in it, I know it sometimes ends up in sauces.
