As said I originally got this from cooks.com but have made several mods to it.

 

Aussie Zucchini Pie

 

1 1/2 half large zucchini, grated

1 large onion, diced

1/2 cup cheddar cheese, grated

1/2 cup Monteray Jack cheese, grated

1 cup self-rising flour, sifted

5 - 6 eggs, lightly beaten

1/2 cup vegetable oil

salt and pepper to taste

Preheat oven to 375 degrees

In medium sauté pan carmelize onions then set aside to cool. Place all the

ingredients into a large mixing bowl and mix with a wooden spoon until combined.

Pour mixture into a well greased 11X7 pan(also works well in muffin tins but cut

baking time down to 25min). Bake for 30-45 minutes or until top is light golden

brown. Remove from pan. Cut into slices.

Can be served hot or cold.

yummmm...this is much like the zucchini pie recipe that donna posted a few years

ago. & nbsp; i love that recipe. & nbsp;

As said I originally got this from cooks.com but have made several

I will have to check out her recipe to. If it has Zucc's in it I love it.
