Donna Tempeh and Arugula Salad Tempeh 2 cloves garlic, pressed 1 tablespoon lemon or lime juice 1/2 teaspoon powdered coriander or your favorite herb ground 1 teaspoon sugar 1/2 teaspoon salt 1/2 cup water 1 8 ounce package tempeh cut into fingers, 1/2 inch wide * note *Note-you can steam the block of tempeh for about 12 minuytes and it will increase in size and plump up. Salad 1 bunch arugula, coarsely chopped 2 ribs celery, chopped 1/2 cup mayonnaise or Vegenaise mayonnaise 3 green onions, chopped 3 tablespoons chopped dill or sweet pickles salt and pepper to taste Whisk together garlic, lime juice, coriander, sugar, salt and water. Pour into a shallow bowl. Add tempeh and let marinate for 5 minutes, turning once or 8 to 24 hours refrigerated. Saute in a little oil on medium heat for 5 or more minutes or until browned, tuyrning now and then. When cool to the touch, dice into 1/2 inch cubes. Blend tempeh and other ingredients. Dice tempeh, blend with other ingredients. Allow to stand for 15 minutes. Serve as a side dish or on lettuce lined bowl. Serves 2 to 4.
