As a Spaniard, I can't overstate the virtues of gazpacho. So easy, so healthy, so good. Plus, it lasts for a few days in the fridge. Just make a large batch and keep it in the fridge for a refreshing pick-me-up at any time. Gazpacho is best made with a handheld stick blender, but any other kind of blender will do. Coarsly chop two pounds of tomatoes, half an onion, one green pepper, one small cucumber (you may want to peel it first). Add three slices of bread, without the crust. Add water (start with about three cups, you can add more later to achieve the desired consistency), a generous pour of olive oil, and a bit of vinegar. Salt to taste. Blend thoroughly, refrigerate, enjoy. Your recipe sounds wonderful, and this is such a refreshing soup.
