With textured soy protein, I rehydrate it in hot water, then squeeze out the water, and use approximately the same weight of rehydrated soy as a recipe would use of ground meat. It's always a matter of experimentation, of course. Good luck experimenting. That means that I need about 1/2 cup to 3/4 cup of dry TVP and about the same or a little less of water. IT's hard to be exact, as it depends upon the TVP you get, your local humidity, etc. Start with less water than you think you'll need, and then wait about 10 minutes. If it still looks a bit dry, add a wee bit more water and so on, until it looks mealy and dampish, but not soggy. Really, if you use too much or too little, it won't matter in most recipes, just like some places serve meatier or less meaty spaghetti sauce. It's to taste! Don't tell my kids, ok? I came across this section at Walton Feeds and it is the best how-to on TVP that I've found. http://waltonfeed.com/self/tvp.html There are even some recipes. Trust me, if my grandson, Mr. Picky I Won't Touch Vegetables will eat chili and tacos made of this stuff, it can't be all that bad. Did I mention it is cheap? Really cheap. Cheeeeeeeeeeeeeeeap. It is rather like tofu in that it absorbs the flavors you are cooking with, but more like me@t to the mouth. & nbsp; School systems have been using it for years to stretch out meat portions. & nbsp; The animals will eat it too, but they won't touch tofu. & nbsp; Discriminating palates, lol.
