Guest guest
1. What is your favorite summer salad? [greens, macaroni, potato, rice, beans, you name it] Any salad you like, in a shallow large caserole dish. Top with generous sprikles of any lasagna you like. Add cottage cgeese generously. French bread on the side. 2 forks. ;>) 2. Where did you first try it or find the recipe? Evolved from salad w spaghetti. 3. Is there a salad recipe you are looking for now? Nope. Need to get more greens into the garden though, LOL! Well, maybe a good ambrosia or two that isn't dependent on heavy coconut doses. I've had some great cheeses that are " choclolate " etc, but can't locate them myself, of descent quality. I'm considering using the meat grinder to make my own. Guest guest
I don't really have a personal favorite salad, but this is one that often take to potlucks and events where everyone brings a dish and it always get rave reviews: Rice Salad Ingredients 2 cups of long-grain white rice, cooked ¼ cup finely chopped coriander ¼ cup finely chopped parsley 1 TBL finely chopped mint 100 grams dried apricots, thinly sliced 2 TBL pine nuts, lightly toasted in a dry frying pan Dressing Ingredients ¼ olive oil Juice from one lemon Salt and pepper (preferably white) Preparation Mix all of the dressing ingredients together. Gently mix the apricots and dressing into the rice while it is still hot. Wait for the rice to cool. Only when the rice has reached room temperature, add the herbs and pine nuts. Mix gently. Serve at room temperature. The herbs may be changed according to taste. The original recipe was from a newspaper. Shoshana
Guest guest
QOTW for June 22nd-29th, 2008: 1. What is your favorite summer salad? [greens, macaroni, potato, rice, beans, you name it] there are few salads that i eat which are specific to a season. i love fresh green salads, minted fruit rice, and seasonal fruit salads. i don't really care for pasta, bean, or potato salads. 2. Where did you first try it or find the recipe? i don't think i really have recipes for much of anything. i just tend to put things together that i think will taste good. 3. Is there a salad recipe you are looking for now? i'm trying to get together a potato salad recipe where you can actually * taste* potatoes and not mayonnaise (i really don't care for the stuff) or mustard (i *hate* mustard) or whatever other components are used. and i'm looking for new salad dressing recipes to try. -- HAIKU --- Drag queens are the rea- Son I pluck my eyebrows. Guest guest
> 1. What is your favorite summer salad? > [greens, macaroni, potato, rice, beans, you name it] Summer just requires a lot of salads; I like them all. The best part is that most do not need much cooking, and you eat them cold. I crave cool foods when the weather is hot. My favorite summer salad is basic macaroni salad like my Grams used to make for Sunday dinner every week in the summer. > 2. Where did you first try it or find the recipe? At my Grams' house. I don't think I liked it though until I was in my early teens. Her recipe had mayo and I didn't like the flavor of mayo until then. > 3. Is there a salad recipe you are looking for now? I would like to see some more unique bean salads. Maybe bean salads that incorporate pastas or other grains? I like tangy, not sweet dressings, too. ~ PT ~
Guest guest
1. My favorite salad is homemade tabouleh (store-bought is generally inedible IMO). I find I can make a big batch and eat it regularly for a week. 2. I had never even eaten tabouleh when I decided to make it for a family affair. Since I'm the only veg in the group, I thought I better make something special: I sifted through recipes in 4 vegetarian cookbooks and COMBINED all the tabouleh recipes. When one recipe called for garbanzos, I added them;when another asked for feta, I added feta. It was rather spectacular, but fairly expensive. Since then, I've cut back on ingredients (though garbanzzos remain a constant). I realized that parsley was awful (and the reason most store-bought is inedible). We have a local meetup group, and I brought my tabouleh to a pot luck. One longtime veg said " Ya know, I never really liked tabouleh before, but this is great " . FWIW, the original garbanzo tabouleh said to cook beans from dry (a good idea) and then skin each bean once cooked. After spending " hours " taking off skins, I resolved to abandon that idea in the future.-- In , " feralvegetarian_moderators " <feralvegetarian_moderators wrote: > QOTW for June 22nd-29th, 2008: > > 1. Guest guest
Parsley is an important ingredient in Tabouli, without it you've made another type of bulgar salad, which might be very delicious, but it's not tabouli. The problem is probably that you used US-style curly parsley which is better for garnishing than eating. Middle Eastern parsley has flat leaves that look a lot like cilantro. They're much better for eating. If you can find it, give it a try. Shoshana Israel , " ddog2771 " <brighter wrote: > I realized that parsley was awful (and the reason most store-bought is inedible).
