My favorite salad is homemade tabouleh (store-bought is generally inedible IMO). I find I can make a big batch and eat it regularly for a week. 2. I had never even eaten tabouleh when I decided to make it for a family affair. Since I'm the only veg in the group, I thought I better make something special: I sifted through recipes in 4 vegetarian cookbooks and COMBINED all the tabouleh recipes. When one recipe called for garbanzos, I added them;when another asked for feta, I added feta. It was rather spectacular, but fairly expensive. Since then, I've cut back on ingredients (though garbanzzos remain a constant). I realized that parsley was awful (and the reason most store-bought is inedible). We have a local meetup group, and I brought my tabouleh to a pot luck. One longtime veg said " Ya know, I never really liked tabouleh before, but this is great " . FWIW, the original garbanzo tabouleh said to cook beans from dry (a good idea) and then skin each bean once cooked. If I recall correctly, the recipe might have used garbanzos with bulgur as a nod to protein complementarity. Whatever the reason, I find it tasty.
