Hi Danielle, that is a favorite pasta of mine.

It can be hard to find but well worth the effort.

This is great meal for a hot summer day, lunch or dinner.

Orzo Salad with Corn, Tomatoes and Basil

 

Dressing:

2 tbsps. fresh lemon juice

1 tbsp. olive oil

1 tbsp. red wine vinegar

1/2 tsp. salt

1/4 tsp. black pepper

I sent a reply earlier today, but it never went through.  I made this today for

lunch and loved it.  I did make a few changes.  I used mandarin oranges instead

of tomatoes (FL tomatoes are yuck), I added sweet red peppers and celery (stem

and leaf), and two kinds of fresh basil along with sage.  Very tasty.  Thanks

I just wanted to let you know that I made this for lunch with a few changes. 

Since Florida tomatoes are not edible in my humble opinion, I used mandarin

oranges.  I also added red peppers and celery (stem and leaf).  Plus I used two

types of basil and fresh sage.  Next time I will put the freshly ground herbs in

with the dressing to marinate.  It was delicious.  I ate 3 small bowls. I also

used the orzo, since that is what I had.  This is definately a keeper!
