Caper Garlic Dressing for 1

I don't have much time in my kitchen anymore.

I whip this up and take my salad to lunch with me.

Caper Garlic Dressing for 1

 

1 clove garlic mashed or 1 tsp. garlic paste

2 tsps. mashed capers

2 tsps. balsamic vinegar

1 1/2 tbsps. lemon juice

3/4 tsp. dijon mustard

1/3 cup olive oil (I use a little less and add some water)

 

Blend the first 5 ingredients. Wisk olive oil in slowly. Yields 1 serving.
