Guest guest
I have been meaning to share this recipe from my files for a while now. I finally got it typed up. This macaroni salad just reminds me of summer in Cape Cod. Northern-style Mac Salad 1 lb. box macaroni 1 medium green bell pepper, chopped [or 1/2 red pepper & 1/2 green for color] 6 green onions, sliced fine; include some of the green tops 2 cups mayonnaise 2 Tbs. prepared mustard; spicy brown or regular yellow 1 tsp. celery seed 1 tsp. dried parsley 1 tsp. black pepper 1 tsp. sea salt paprika for garnish This is a simple recipe. Boil the macaroni until tender; drain and rinse well to cool. While that is cooling, add all of the other ingredients in a large mixing bowl; stir well to combine. Add the macaroni and fold together to evenly blend everything together. Dust top of salad with paprika. Cover salad and chill for two hours before serving; even better if chilled 8 hours or overnight. shared by Gaia
