Guest guest Posted August 11, 2008 Report Share Posted August 11, 2008 Hi Everyone, I'm about to start back to work (i'm a pre-k teacher) and my son is about to start back to school. We both take our lunch everyday and we need new ideas for healthy, tasty lunches. I love taking colorful veggies and fruits and healthy foods in my lunch because my students always want to know what I'm eating and it's a teaching opportunity (nutrition, vitamins and minerals, where food comes from, etc). I had a seaweed salad addiction last year and the kids were just tickled when i would eat seaweed with chopsticks. One of the moms came in and said her daughter said Ms. Susie eats seaweed and I responded, " I do! " Perfect opportunity to educate parents as well....it's amazing how some people eat. They have never had their minds open to all the wonderful and diverse foods out there. I ramble..... Anywho, any great lunch ideas? Guest guest Posted August 11, 2008 Report Share Posted August 11, 2008 One of my favorite recipes is a garbanzo bean spread. Mash up some cooked garbanzos leaving them a little chunky. Use a Vegetarian Mayo, I like Vegenaise, a tiny bit of finely diced celery, and onion if you want, a pinch of seaweed granules and a squeeze of lemon juice. You can eat it as a dip or it is great on toasted bagel with tomato slice open face. I eat sprouted grain bread and like my sandwich on that. Oh yea and I spread hummus on it before I put it all together Also I love veggie avocado brown rice sushi rolls and miso soup. And then there are always leftovers wraped in a tortilla with an apple on the side. There are groups dedicated to vegan food, vegetarian food, packed lunches/bento and vegetarian/vegan bento. I find that seeing actual pictures is a big help and many people post the recipes they used, or links to the recipe on other sites. The various general bento groups will include meat but I know there are several vegan bento/lunch groups. I never thought about putting hummus on a sandwich though--I always use it as a dip.
