My grandmother loved to make this around the Christmas holiday, but now we enjoy it all through the year especially when we want to remember her warm personality and gentle spirit. It always makes us smile. Russian Coffee Cake 1 c. sugar 1/2 lb. butter 1 pt. sour cream 3 unbeaten eggs 2 1/2 c. flour 3 tsp. baking powder 1 tsp. baking soda Cream together sugar and butter. Add sour cream. Add unbeaten eggs, one at a time. Combine flour with baking powder and baking soda. Dough will be stiff. Spoon half the dough into a well-greased and floured 10-inch tube pan. Sprinkle 3/4 of filling over first half of dough. Spoon in remaining dough and sprinkle rest of topping. Bake 1 hour at 350 degrees. Cool 1 hour before removing from pan. FILLING AND TOPPING: 3/4 c. sugar 4 tbsp. cinnamon 1 c. chopped nuts (we prefer walnuts, but pecans also work) -shared by Gaia Quote Link to comment Share on other sites More sharing options...
Guest guest Posted August 12, 2008 Report Share Posted August 12, 2008 We made this cake today except that we sub'd stevia for the sugar. We used 1/3 c. in the cake and ¼ c. in the topping/filling. The cake itself turned out very well. Moist and delic! However the topping/filling not so much. It was dry and kind of bitter. I think the bitter was the stevia. Should we add some margarine or something to help the dryness? I'll bet the cake made with sugar is delicious but I work in a sugar free residential setting and am trying to come up with deserts.
