Guest guest Posted August 16, 2008 Report Share Posted August 16, 2008 Fast and easy and very cheesey. Joe Cheese Zucchini Pasta One medium zucchini per person. If you have a mandoline slice the zucchini into strips resembling pasta or you can use a knife or other slicing device. Experiment with thickness. Put the strips into a pot of boiling salted water for about one minute. When cooked remove and drain. Pour your favorite sauce warmed over the zucchini, such as pesto, Alfredo, tomato sauce, etc. Sprinkle the zucchini pasta with a lot of Parmesan or grated cheese of your liking. I believe I will saute some onions and garlic and add to the sauce. As long as I have the frozen alternative products, cheese, eggs and tofu I find being a new vegetarian easy. I can't wait to get a Quorn roast next.
