Cheese Zucchini Pasta

Fast and easy and very cheesey.

Cheese Zucchini Pasta

 

One medium zucchini per person. If you have a mandoline slice the zucchini into

strips resembling pasta or you can use a knife or other slicing device.

Experiment with thickness.

Put the strips into a pot of boiling salted water for about one minute. When

cooked remove and drain.

Pour your favorite sauce warmed over the zucchini, such as pesto, Alfredo,

tomato sauce, etc. Sprinkle the zucchini pasta with a lot of Parmesan or grated

cheese of your liking. Brown for 5 minutes in a preheated 350 degree oven.

Thank you. I usually use spaghetti squash for this type recipe. I

can't wait to try it out on zucchini. I believe I will saute some

onions and garlic and add to the sauce.

This sounds great, Joe. I think you could use the thin

sliced zucchs to make manicotti rolls, don't you think?

Mmmmm I am making myself hungry. :)

Glad you like my recipe. I will post more as I try them. I have

some to send it already. As long as I have the frozen alternative

products, cheese, eggs and tofu I find being a new vegetarian easy.

I can't wait to get a Quorn roast next.
