Now that summer is coming to a close this Labor Day weekend perhaps our thoughts are turning to school schedules, activities, and getting back in to Autumn routines. Share your ideas and advice! 1. What are some of your favorite most requested after-school [after-work] snacks and treats? 2. Do you have some healthy, fast lunchbox ideas that make eating vegetarian easy while at school or work? 3. What do you find to be the biggest challenge being a vegetarian at school or work? My son loves nachos and cupcakes the best. He likes quick things that he can grab and eat right away. I swear he is a tall skinny bottomless pit these days. My son isn't a vegetarian, and I don't push it. I offer delicious vegetarian foods and he eats them. He usually buys lunch at school, which always sounds gross to me when I ask him what he had. School meals are not like they used to be in the 60s and 70s when I was there! This year I am going to make him pack his lunch more. He eats peanut butter sandwiches almost every day, and those will be easy for him to put in his back pack since they don't need refrigeration. For myself, I never run out of great vegetarian lunch box ideas to take to work. I am lucky to have a nice break room with refrigerators, microwaves, and toaster ovens. > 3. What are some of your favorite most requested after-school [after-work] snacks and treats?* Kid A is a big fan of fruits of all types, fresh, frozen, tinned, dried, etc. doesn't much care to snack on veggies unless they've been crisped though. lately his big thing is fruit and seeds and milk. most days when i get home from work, i'll have a bottle of water and some seeds or nuts to hold me over until dinner. occasionally i'll have half of a bagel if i've skipped lunch that day. *2. Do you have some healthy, fast lunchbox ideas that make eating vegetarian easy while at school or work?* the schoolkid in the house is an omni... when i'm at school, it's really inconvenient to take a sack lunch with me as i don't have access to a refrigerator. the university is convenient to tons of restaurants and a few grocers, so it's not impossible. at work, we have a full cafeteria as well as breakrooms on each floor with refrigerators and microwaves and vending machines. i usually keep supplies in my desk as a back-up plan. currently i've a bottled water, assorted varieties of tea, instant soup bowls, instant noodle bowls, honey for said tea (i am not vegan), cereal bars, and whole-grain cereal in takeaway bowls. i'm good for forgetting to bring lunch (and depending on the day as i work fourteen-hour shifts on the weekends - breakfast and dinner) when i go into work though. what i've gotten into the habit of doing is setting the alarm ten minutes earlier, taking leftovers from dinner the night before, and putting them in my lunch tin and out in the car. if i do it before my shower, i have at least one meal covered for the day. *3. What do you find to be the biggest challenge being a vegetarian at school or work?* for me it's a timing issue. if i've forgotten to bring something and don't have anything in my desk and it's the weekend, i'm at the mercy of local merchants (most of whom are fast-food or otherwise equally unhealthy). the cafeteria is only open during the week, and the local vegetarian eateries have abbreviated hours on Sundays. i'm finding that i can get by with selections from the local convenience store, which has a small selection of fresh fruits and the occasional green salad as well as bottled waters and juices. -- xoxo, ^8^ Reni ^8^ HAIKU --- Drag queens are the rea- Son I pluck my eyebrows. Do you have some healthy, fast lunchbox ideas > that make eating vegetarian easy while at school or > work? i went off some ideas posted here for lunch ideas for school. I make myself wraps a lot, and alot of pasta with veggies and sauce. > 3. What do you find to be the biggest challenge > being a vegetarian at school or work? the lack of refrigs available to me. I am a college student. all i have access to is a microwave. I commute 30 miles so i usually freeze my lunch and leave it in my car, since i'm in texas it gets hot in it, so no cheese or perishable items. I take my lunch to the cafeteria (expensive so i don't eat there) and use their microwave and eat it there. Beans and rice are another favorite and easy dish of mine. I crock pot beans weekly or everyother week, separate them into containers and add something different to it everyday, rice, pasta, veggies, spices. everyday is alittle different.
