Also I hear that ground flaxseed and water mixed together make for a good egg substitute, although I'm not sure how well this would work in baking. Have you tried doing a search for vegan cookies? Guest guest Posted October 12, 2008 Report Share Posted October 12, 2008 We also have a section in our files about egg replacement tips, and in there is a recipe to make a homemade version of Ener-g Egg replacer. Cut out sugar cookies don't need to rise much, so anything like tofu and such should work fine. I would caution on the use of banana in a sugar cookie only for the flavor impact it may have; banana tends to be strongly flavored and good in recipes it will blend well with. Baby food jars of pureed banana is less flavorful though.
