Very true but.......... why not just make your own mix for less $$ than the stuff you buy? Then you know exactly what is in it and exactly when it was made. 4 cups all-purpose flour 1 Tablespoon salt 3/4 cup sugar 1/4 cup baking powder 1 cup vegetable shortening 4 1/2 cups cornmeal In a large bowl, combine flour, salt, sugar and baking powder. Stir to blend well. With pastry blender, cut in shortening until evenly distributed. Add cornmeal and mix well. Put in large airtight container. Label. Store in cool, dry place. Use within 10 to 12 weeks. Makes about 10 1/2 cups of cornmeal mix. To make cornbread or muffins use 2 12 cups of the mix, 1 egg or substitute, 1 1/4 cups milk. This mix does not take long to make nor is it expensive, however, once you have it made you will find it does not last long because it is convenient and you use it more often.
