More and more I am understanding the huge benefits of eating nutritionally rich foods, and am striving daily to have these foods in my diet. My husband is happy to sit down to a plate full of meat for dinner, and that is it. He would not eat vegetables at all if I wasn't around. The other day I made a spicy bean soup with lots of veggies, and I made hummus for the first time. I had made the soup before, so I know he liked it. He actually asked me to make it again. Must be the change in seasons. He also liked the hummus, but said he thought it needed something. I was happy and surprised that he tried it at all, because he doesn't like new things. I had been gone for a few hours, and upon my return, husband was excited to say he wanted me to try something. He had taken my hummus and put it in a nine-layer dip! It was full of sugar-laden canned beans, fatty sour cream, full-fat cheese, etc. No wonder I am overweight and lack nutrition (smile). I love my sour cream and my real cheese! hehehe Now what sort of canned beans did he use that had sugar in them? I love hummus in so many different ways. You can really change the flavor by stirring in some chopped sun dried tomatoes, or extra roasted garlic, or minced jalapenos. Thanks for calling me out on it, PT. I just know that whenever my husband jazzes up some food dish, it is fattening, and becomes unhealthy. He tries to add heavy cream to my soup, for instance. It usually tastes good, but not good for someone like me who is trying to be eat healthier. He is the kind that can eat anything and not gain weight.
