Even my non -squash loving family enjoyed it. Enjoy, Judy Pasta with Spicy Peanut Sauce 16 oz spaghetti noodles, break up before boiling. 3 yellow squash, diced up 1 bell pepper, red or green, diced up 4 green onions, sliced up 1/2 onion diced 6 garlic cloves, minced 2 T. Oil 1/2 c. creamy or crunchy peanut butter 1/2 c. tamari or soy sauce 1 T. sugar 6 T. lemon juice Red Pepper flakes(optional) Cook noodles and drain and rinse. While noodles are boiling, put diced up veggies in a large bowl and cook covered in the microwave for 5 minutes. In a skillet, heat oil to med heat and add minced garlic. Cook one minute and add the peanut butter, tamari, lemon juice, sugar and lemon juice . Stir until well blended. Add the steamed veggies and stir to coat. Stir in the the cooked noodles.
