Corrected recipe - Pasta with Spicy Peanut Sauce

We made this for dinner. It is delicious blend of ingredients and taste

best when first made. Even my non -squash loving family enjoyed it.

Pasta with Spicy Peanut Sauce

 

16 oz spaghetti noodles, break up before boiling.

 

3 yellow squash, diced up

1 bell pepper, red or green, diced up

4 green onions, sliced up

1/2 onion diced

 

6 garlic cloves, minced

2 T. Oil

1/2 c. creamy or crunchy peanut butter

1/2 c. tamari or soy sauce

1 T. sugar

6 T. lemon juice

Red Pepper flakes(optional)

 

Cook noodles and drain and rinse. While noodles are boiling, put diced up

veggies in a large bowl and cook covered in the microwave for 5 minutes.

In a skillet, heat oil to med heat and add minced garlic. Cook one minute

and add the peanut butter, tamari, lemon juice, sugar and lemon juice . Stir

until

well blended. Add the steamed veggies and stir to coat. Stir in the the

cooked noodles. Add Red Pepper Flakes to taste or let each person add their

own, on their plate.

Serve immediately.
