Guest guest Posted November 14, 2008 Report Share Posted November 14, 2008 Hurry up and give these away or you can eat them until you almost burst LOL Donna Oatmeal Cranberry White Chocolate Heavenly Cookies 1 cup butter, softened 1 cup white sugar 1 cup packed light brown sugar 2 large eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon cardamom (optional but I always use it) 3 cups oats (not instant) 1 cup dried cranberries or Craisins 1 cup white chocolate chips,or small broken pieces of white chocolate Melted white chocolate to dip when cookies are done Note - you can color the white chocolate to fit the season if you desire. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. In a separate bowl combine flour, baking soda, baking powder, cardamom(optional)and salt, and stir dry ingredients to blend with a fork. Mix the dry ingredients into the creamed mixture. Stir in oats, dried cranberries and white chocolate. Cover, and chill dough for at least one hour. Majes it easier to roll into balls this way. Preheat the oven to 375 degrees F (190 degrees C). I use a silpat so if you don't have one then lightly grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. You can roll the balls in turbinado sugar for a nice crunch when done. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 3 - 5 minutes before transferring to a wire rack to cool completely. Now melt some white chocolate in the microwave or a double boiler, dip half the cookie in white chocolate and lay on waxed paper until dry.
