This year in particular, I am thankful for my new job, which began in the spring, and my new friends. 2. What I do at Thanksgiving varies from year to year. I have visited family. I have hosted Thanksgiving dinner at home for both small and large groups. I have gone out to restaurants. This year I am gathering with friends. 3. My favorite vegetarian Thanksgiving dish is a brown rice and wild rice pilaf with cranberries, which I am preparing for this year's gathering. Guest guest Posted November 16, 2008 Report Share Posted November 16, 2008 I am thankful for my health, family, and my job. I just wish I lived closer to my niece and sister. This year I'm going out to a vegan Thanksgiving feast with members of my Houston Vegan Meetup Group. On actual Thanksgiving, however, I'll be working. As far as a dish, I'll probably be making a tradition out of roasting up my Tofurkey, sweet potatoes, and vegetables. I always make too much food, so I told the hubby to invite people from work who don't have plans. Who knows if anyone will show up. I haven't planned a menu yet. > 3. That even though my husband lost his job in September due to a lay-off and bad economy, that we have been able to make ends meet and pay our bills. He is working freelance and making more than before at his 9 to 5er! I am thankful for love and friendship, a warm fire, and happy sleepy dogs that enjoy a snuggle when I need a hug. > 2. I will have to make my own Quorn roast, and vegetarian gravy and stuffing to take along with me there because they are not vegetarians and I don't want to cause them trouble. > 3. This year I am thankful for the safe arrival of my newest grandson, he was born on Nov 1, weighing in at 9 lb, 2 oz and 22.5 inches long. 2. As we have already had Thanksgiving in October, I dined at my brothers who is also a vegetarian and had a wonderful meal. 3. I don't know that I have a favourite. But I do like lentil dishes a lot, but anything made with veggies is great, especially fresh veggies. I'm most thankful for my continued good health ,the love of my family and friends, and the opportunity to continue my research with a supportive, understanding team. 2. Usually, we host Thanksgiving at our house...but with my dear Grandma so recently passing away (and she was the center of our celebrations), I'll be surprised if we get many visitors this year. Her loss (particularly her miss space around the holiday dinner table) is still so hard for many in the family to bear. 3. Sweet potato pie and dressing with cranberry sauce are my favorite veggie Thanksgiving dishes--and I can't wait to taste 'em! Guest guest Posted November 27, 2008 Report Share Posted November 27, 2008 2. We have a Gentle Thanksgiving with a vegan group at a local park each year. 3. For that event, I normally make a Tofurky roast in red wine gravy surrounded by veggies, but some members are whacked out about soy (due to a local health food messiah/ store owner), so I tried to use tempeh (i.e. fermented soy) for an entree. I found the following on the " Jew and a carrot " site--- " Apricot & Apple Glazed Tempeh with Onions Serves 6-8 For Tempeh 3 garlic cloves, minced 2 Tbs minced ginger 1 cup tamari 2 Tbs toasted sesame oil 16 oz tempeh (I use Soy Boy's 5-grain brand) 1 large white onion, quartered, and sliced 1/2 tsp red pepper flakes 2 Tbs olive oil For Glaze Remainder of marinade 1 cup apple butter 1 cup apricot jam 1/4 cup brown vinegar Make the marinade: combine ginger, garlic, tamari, and sesame oil in a bowl. Cut Tempeh into 1 inch x 1/2 inch rectangles. Place tempeh rectangles into a large, sturdy plastic bag, and pour marinade into bag. Let sit for one hour, rotating bag occasionally, to evenly coat tempeh. Meanwhile, slice onions and set aside. Combine apple butter, apricot jam, and vinegar in 2-cup measuring bowl. After one hour, remove tempeh from plastic bag and place in one layer onto baking sheet and broil on either side for 5 minutes. Stir remaining marinade into glaze mixture. In a large pot, heat 2 Tbs olive oil and red pepper flakes over medium heat. Turn heat up slightly and add onions. Cook, stirring occasionally, until onions turn fragrant and brown. Add glaze and stir to coat onions. Cook for 5 minutes, stirring occasionally, until glaze thickens slightly. " ___===____++++______++++____===___ I chose to adapt the recipe by filling a roaster pan with pre-steamed potato, carrots & onions, placing the glazed tempeh on top and baking a while. I thought the glaze turned out too sweet due to the apple butter and apricot jam (I used commercial products); some homemade apricot/apple sauce WITHOUT high fructose corn syrup would be much better. > 2.
