I am always happy when I can find a good deal on those marinated artichoke hearts. I have before used just one jar of the marinated chokes and one can of the water-brine packed chokes.... that worked out great, too. I am all for saving money so long as it doesn't skimp on taste! Artichoke Rice 1 cup rice 2 cups no-chicken broth [or veggie broth of your choice] 2 (6 1/2 ounce) jars marinated artichoke hearts ~ with liquid 1/3 cup Vegenaise 3/4 tsp. curry powder 1/4 tsp. garlic powder 4 green onions, sliced 1/2 green pepper, chopped 12 stuffed green olives, sliced Cook rice in veggie broth until tender and remove from heat. Drain and chop artichoke hearts; reserve marinade. In a small bowl, blend together marinade with the vegan mayo, curry and garlic powder. Stir marinade mixture into rice. Add chopped artichokes, onions, peppers and olives; toss well. May be served warm or cold. We eat a lot of them so I'm going to try this recipe but without the olives. That's one thing I really don't like. I'll slice a few on my DH's portion. I'm trying to get organized with some menu plans for the new year and have made a list of what I want to make.
