I'm not a big fan of the toasted ancho chiles....I find them too bitter (perhaps I over toasted them). I like making this with Monterrey jack or a half/half mixture of cheddar and Monterrey jack. I like to add chopped pickled jalapenos to the dip too. Minguichi 1 cup Mexican crema (or creme fraiche if you cannot find crema) 2 cups gated medium cheddar cheese 2 ancho chiles, seeded, and toasted until crisp Spoon the crema into a heavy saucepan and cook over low heat until warmed. Add the cheese and stir until it melts. Crumble the chiles and mix well, then pour into a bowl and serve immediately with tortilla chips.
