[recipe*] Cheese and Noodle Casserole

This is so rich and yummy. A very elegant spin on

basic mac & cheese that only Linda McCartney would

come up with.

If there are any new vegetarians on list, I would recommend

you get some of her cookbooks. They are full of easy and

delicious recipes, plus great advice. :)

 

 

Cheese and Noodle Casserole

 

1 package [16 oz.] noodles

1 cup sour cream

12 oz. cream cheese

8 Tbs. milk

2 Tbs. chopped chives

2 tsp. minced garlic

1 Tbs. chopped fresh herbs [ basil, oregano, marjoram, etc.]

2 Tbs. butter

1 Tbs. fresh chopped parsley

1/2 cup grated Romano or Parmesan cheese

 

Pre-heat oven to 350 degrees and boil noodles

in water until done, then drain. Mix together the

sour cream, cream cheese, milk, chives, garlic and

herbs of choice, then fold in the noodles until well

combined. Pour mixture into a greased casserole

dish. Dot top of casserole with butter and sprinkle

parsley and cheese over top evenly.

Bake uncovered for about 30 minutes.

Yield: 6 generous servings

Oh yes, that is a wonderful idea.

Do you use Toffutti brand?

I have tried their stuff and thought it was really

good.

 

I know Linda McCarney's earlier cookbooks,

like the one I got this recipes inspired from, she

was a lacto-ovo vegetarian. But in her later cookbooks

you could tell she had shifted to being vegan.

Her vegan recipes are wonderful, too.

Enjoy and let us know how you convert it, and if

you liked the results. :)

We have been using the Tofutti cream cheese as we have not been able to find

the Better Than Cream Cheese. My daughter didn't think she liked the

Tofutti but I got her to try it again and she really does like it.

We also love the Veganise even my husband will use it.

I've only ever seen the Tofutti Better than Cream Cheese before. We love the

Veganise by Follow your Heart though. Great stuff.

I made this last night with all vegan substitutes and it turned out very

nice--thanks for the recipe. :)
