Toasted Almond and Orange Couscous

 

1 Tbs. olive oil

1 medium onion, chopped

1 cup couscous

1 tsp. turmeric

1 cinnamon stick

1 whole clove

1 cup fresh orange juice

1 Tbs. orange zest

3 scallions, thinly sliced

1/2 cup toasted, slivered almonds

salt and pepper

 

Instructions:

 

1. Heat olive oil in a saucepan and add chopped onion. Saute until soft.

2. Add orange juice, orange zest, turmeric, clove and cinnamon stick. Bring

to a boil.

3. Stir in couscous, cover and turn off heat. Let sit covered for 5 minutes.

4. Remove lid and fluff with a fork. Remove cinnamon stick and whole clove

5. Gently stir in almonds and scallions.

You can find in on the International Isle or near the rice in most grocery

stores. Near East is one brand that has couscous and it is in a box.

like. Just get the plain couscous for this. The Near East Brand also makes a

good falfel mix and tabouli mix.

Can I buy couscous and turmeric in a regular grocery store?
