Guest guest Posted January 15, 2009 Report Share Posted January 15, 2009 Toasted Almond and Orange Couscous 1 Tbs. olive oil 1 medium onion, chopped 1 cup couscous 1 tsp. turmeric 1 cinnamon stick 1 whole clove 1 cup fresh orange juice 1 Tbs. orange zest 3 scallions, thinly sliced 1/2 cup toasted, slivered almonds salt and pepper Instructions: 1. Heat olive oil in a saucepan and add chopped onion. Saute until soft. 2. Add orange juice, orange zest, turmeric, clove and cinnamon stick. Bring to a boil. 3. Stir in couscous, cover and turn off heat. Let sit covered for 5 minutes. 4. Remove lid and fluff with a fork. Remove cinnamon stick and whole clove 5. Gently stir in almonds and scallions. Near East is one brand that has couscous and it is in a box. http://www.naturalgrocers.com/near_east-m-519.html Here is what the box looks like. Just get the plain couscous for this. The Near East Brand also makes a good falfel mix and tabouli mix.
