Three-Cheese Macaroni and Cheese

 

 

12 ounces elbow macaroni

1/4 cup butter or margarine

1/4 cup all-purpose flour

3 cups milk

1 1/2 cups shredded Cheddar cheese

1 cup shredded Gouda cheese

1/2 cup shredded Mozzarella cheese

1/4 teaspoon anchovy-free Worcestershire sauce

1/4 teaspoon salt

Bread crumbs -- optional

 

1. Preheat the oven to 350 degrees.

2. Cook the macaroni according to package directions, for the minimum

suggested time; drain.

3. In a 3-quart saucepan, over medium-high heat, melt the butter or

margarine. Stir in the flour until absorbed.

4. Using a whisk, stir in the milk. Cook over medium heat, stirring

constantly, until mixture comes to a boil. {Make sure you get all the

edges

of the pot so that there are no clumps in the bottom.} Stir in all the

cheeses, the Worcestershire sauce, and salt. Remove from heat and

continue

stirring until cheeses are melted. Stir in the cooked macaroni. Pour

into a

greased 9-inch square baking pan. Sprinkle with bread crumbs, if

desired.

5. Bake 30 to 45 minutes, or until bread crumbs are browned and

mixture is

heated through and bubbly.

 

Serves 4.

 

VARIATION: Use an additional 1 1/2 cups of shredded Cheddar instead

of the Gouda and Mozzarella.

I buy mine at Fred Meyer stores. It is a Kroger brand.

You can buy it online or at healthfood stores...

Wizard is a common brand of anchovy-free.

We may even have a homemade sauce recipe

in our files you could try instead of buying a

bottled brand.

Whole Foods. You can get it on line, just google for

vegetarian worcestershire

YUM!! Made this for dinner last night and it was fabulous. I had to switch the

Gouda with american (because my kids are picky little freaks..) and I added some

parmesan to the top. It was fabulous. Thanks for the info!!

I just wanted to let you know how much I have been

appreciating the recipes you have been sharing with us.

I filed the recipe in our files in the Main Dish folder,

from the main dish folder, into the pasta folder, and then

finally into the 'Macaroni and Cheese' sub-folder:

Files > Main Dishes > Pasta Dishes > Macaroni and Cheese

 

Sounds confusing, but really it is not too bad once

people get used to browsing around in there.

Good Morning Patchouli!

How nice of you to e-mail me - glad you're enjoying the recipes.

I'm thoroughly enjoying the group and will most definitely keep

posting as I find things that I think the members would enjoy. I

like your filing system - it makes the information much easier to

locate when someone is doing a search. My own two groups both have

extensive files sections and are arranged similarly.

I don't know what part of the country you're located in, but I hope

you're keeping a little warmer than we are here in east KY - it's a

balmy 12 degrees here this morning, but that's an improvement over

the -8 of a few days ago (LOL)! I'm looking forward to spring and

being able to start working in my herb garden again and can't wait

to see the jonquils and crocus poking their heads up!
