Hi 2 new vegetarians here!

Hi everyone! I am Michelle and my son is Devin. Devin is 7 years old

and I just turned 30. Devin came to me 2 weeks ago and said mom i am

not eating meat anymore! He really never ate it anyway maybe a bite or

two but not in quanity only from McDonalds. I in the past had tried to

become vegetarian but i was raised by my grandmother and it was a

fight. We seem to be doing well, we have not eaten meat at all. I

just am not sure what are the key items to have in our diet and how to

prepare them so that is why we asked to become members. I havent a

clue on how to prepare dried beans or how to make them taste good lol.

I am looking forward to reading your recipies and getting all the

advice i can. I went to my local library and guess what, no vegetarian

books not one. I thought that was odd, they ordered some for me though.

Welcome Michelle and Devin!

 

I've been a Veggie for 25 years [i'm 46].  We raised our daughter Vegetarian;

she's 25 now, and a VERY healthy (and beautiful) medical student about to

graduate as a chiropractor this fall!!  So, don't listen to the carnivores and

government with their health concern spiels (I dunno - maybe you already know

how silly and misguided their arguments are.)  Children do not need dead sliced

animals or cow mucus to be healthy - just the opposite!  There are lots of good

recipes here to help with your transition - enjoy!

P.S. Did you ever read about the idea that body cells live seven years and are

constantly being replaced?  I remember passing my seven year mark and thinking

to myself, " Alright - I'm really a vegetarian now!! "   You are on your way!

Hi Michelle,

Welcome to the group. I have a 9 year old who is a

vegetarian. If you eat a wide variety of foods, you

should get all the nutrients you need. Often you will

find that a vegetarian diet will be motivaton to try

new foods (esp. fruits and vegetables).

Feel free to post any questions or requests for

recipes to the group. We have some very knowledgable

memebers. Also, be sure to check out our recipe files

for tons of tried and true recipes:

Dried beans are pretty easy to prepare. Pretty much,

just follow the directions on the package. I like to

soak my beans in water over night. The quick soak

method (directions are on the package) works fine too.

Pinto beans are my favorite dried bean to prepare. I

cook them according to package directions and towards

the end of cooking, add a canned chipotle pepper (or

2) with a little of the adobo sauce they come in. I

add salt and a little chili powder the last 30 minutes

of cooking. Sometimes I will add a 1/2 stick of

butter at the end to make the " broth " extra yummy.

Glad you decied to join the group.

You will learn loads from the recipes posted

and if you have any questions about ingredients,

substitutions, or just what to fix for dinner, please

ask us. We are blessed with many kind folks who
