Judy Mediterranean Corned " Be*f " Semolina Sandwich Loaf of Sesame Semolina Bread - I find this at Sam's club, Fresh Markets and Panera Bread(yes you can buy a loaf from them) Worthington Corned " Beef " slices (all vegetarian meat substitute) 2 med. tomatoes, diced 1/2 small onion diced or 2 green onions, green and white part, sliced 3 oz. crumbled Feta cheese 1 cucumber diced 2 T. Balsamic vinegar or Rice Vinegar 3 T. Extra Virgin Olive Oil 1-2 t. Bragg's Herb Sprinkle Seasoning - http://bragg.com/products/sprinkle.html In a medium bowl, mix together the tomatoes, onions, feta cheese, cucumber, Balsamic Vinegar, Olive Oil and Bragg's Herb Sprinkle. Toast slices of the Sesame Semolina Bread. Cut the Corned " beef " sliced in half to fit the bread slice size. Spoon the tomato/cucumber mixture onto a toasted slice of bread and then add a slice of the Corned " beef " . Top with another toasted slice of bread and enjoy! This will make several sandwiches. *Tip - The Vegetarian Worthington Corned " Beef " product is a frozen item. It comes in a big roll. I thaw it and slice it up. Then add a few slices to sandwich size zip loc bags and freeze. Then when I want a sandwich, I just grab a sandwich bag with a few slices to thaw out or use. It's much easier to use this way.
