Egg Free Lent

Every year I remove eggs from my diet for Lent (that is 46 days this

year--with the exception of the 6 Sundays in there). And every year I

find breakfast time increasingly harder for me to fill the void that

was once heavy with thousands of egg-ish delights.

 

So I need some great breakfast ideas that will leave me light but

satisfied and not even thinking twice about my eggy friends.

Recently, in an attempt to find something else, I have been eating a

piece of bread that I toast with some dijon and cheese and then i top

it with thin slices of apple. It is delicious, but is getting old

quickly. And I eat oatmeal that I start in the crock pot at night,

which is good, but can get old as well. I need some more

thoughts/recipes!!!!

 

Any suggestions??

Oh! And I have three children, whom I have to wrangle in the morning,

so time is not something I have a lot of. :P

P.S. I am also giving up Facebook for 46 days, but that is an

entirely different addiction and for that I do NOT seek help in

replacing. Just sympathy.

We have a bunch of great ideas for breakfast

foods in our recipe files.

Go to the Breakfast Ideas folder, and in there

you will find other subfolders like:

 

1. Biscuit and Gravy Recipes

 

2. Breakfast UnMeats: recipes for fakey bacon,

veg breakfast sausages, etc.

 

3.Cold Cereals and Granolas: Includes breakfast bars

made with cereal or granola.

 

4. Doughnuts and Cinnamon Rolls

 

5. Egg-Free Scrambles and Such: tofu scrambles and

other egg-free breakfast entrees

 

6. French Toast Recipes

 

7. Waffles and Pancakes: also a place for crepes or any

sort of griddle cake

 

Good luck researching our files there.

Another thing I'd suggest, is to think outside the breakfast

norm. Sometimes I enjoy a bowl of soup, or a re-heated bowl

of vegetarian stew to start my day. Pizza, quesadillas, beans

and rice, etc. Breakfast should be delicous and filling to get you

going through your busy day. :)

I find nuts with my toast is good...as well as a banana.  I cut the banana up

and eat the pieces with a fork...makes me think I am eating something...and

lasts longer.

 

I have also been known to eat potato chips for breakfast...After all, we do eat

hash browns.

How about a tofu scramble, or frittata, you can eat them like eggs but they

have no egg in it. You can even eat them on a roll.

Also pancakes, waffles, sausage and biscuits, a wrap or sub sandwich.

Veggie soup or Miso soup. Granted not your typical breakfast food, but

breakfast doesn't have to be.

A banana is very filling...good with toast...or a chunk of cheese...treat

yourself to a donut...cookies....fig bars
