If you don't have a hand-held blender, puree the soup in a regular blender....just be careful since the soup is very hot. Cream of Cauliflower and Parsnip Soup 1 tablespoon extra-virgin olive oil 1 tablespoon unsalted butter 1 large shallot, peeled, and sliced 1 cup peeled, coarsely chopped parsnips (about 2 medium parsnips) 2 cups coarsely chopped cauliflower florets (about 1/2 a small head) 2 3/4 cups vegetable broth 1/4 cup heavy cream salt and pepper to taste Heat olive oil and butter in a medium saucepan over medium heat. Add the shallots and cook, stirring occasionally, until softened, about 3 minutes. Stir in parsnips and cook until softened but not completely tender, about 4 minutes. Add cauliflower, stir, and cook for about 1 minute. Add vegetable broth, bring to a simmer, reduce heat to medium low, and cook until vegetables are completely tender, about 8 to 9 minutes. Turn off the heat. Using a hand-held blender, puree the soup mixture until completely smooth. Add the cream to the soup and season to taste with salt and pepper. Serve immediately. I just placed it into our soup recipe file folder under the " cauliflower soups " sub- folder. We now have six delicious recipes in there for making soup featuring cauliflower.
