I make the recipe off the label on the Bush Chili Beans Can and use Worthington Vegetarian Burger(canned product). It is our favorite chili recipe........ Yumm. What is for dinner: Big pot of soup: made with left over seitan broth, tomatoes, baby corn, green beans, carrots, onions, soba (buckwheat) noodles and tofu. Add lime juice at the end and chopped cilantro. That is left over from yesterday.... Black bean pupusas: This is going to be made fresh. Make your version of refried black beans or use a can of veggie black beans (careful, some of them contain lard). Use Maseca (dry instant masa harina) moisten with water until it is a dense paste but pliable. Make it into a ball and press between plastic or with a tortilla maker. Make two of them per pupusa. Assemble two layers of masa tortillas place the refried black beans and a little goat cheese (optional) in the middle. Piece together in between two plastic bags and squeeze gently so it is like a filled tortilla, or a tortilla sandwich. Pan fry in skillet on both sides. I boiled 4 cups of water, added a spoonful of Better Than Bouillon, a thinly sliced carrot, handful of sliced nmushrooms, chopped celery, chopped 3 baby bok choys, handful of chard leaves chopped, 2 squeezed garlic cloves, 1/2 chopped onion, one turnip chopped, boiled all of it for 17 mins, added the udon noodles and a 1/2 cup of cooked leftover white rice, boiled 3 more minutes and enjoyed this in my BIG Japanese soup bowl with 1/2 block of diced bean curd on top and some toasted black sesame seeds and chopped nira! Nira is a Japanese chive that is a cross between a green onion, chive and garlic. here's a link, if you are in an Asian market please give them a try, they look like flat chives. Very good for a quick meal since I worked over and didn't feel like doing much cooking. Guest guest Posted November 13, 2008 Report Share Posted November 13, 2008 I am somewhat new to the group...but I have found so many great ideas...I am a single mom during the week and dh is here fri,sat, and sun. I live the veggie life much easier during the week. My 2yo is pretty easy going. I am trying to convert hubby and 12yo son on weekends. Tonight I'm finishing up some curried lentils I did in the crock pot this weekend I loved them, everyone else was luke warm. They did better with black bean lasagna. Guest guest Posted November 13, 2008 Report Share Posted November 13, 2008 Tonight I am having a vegetable soup that has everything in it, including some fresh turnips that I was given at church last night. I have some turnip leaves to clean and cook. They are very fresh, too. I am a big eater of various soups and stews when the weather cools. I can have a batch of soup for a couple of weeks, adding more vegetables and more vegetable broth as the pot gets down there. This comes from the big pot of soup we had on our woodburning stove as I grew up. No one could give you the recipe for what was in it. Wow, it's good. The onions are all chopped and waiting for the pie to get put together. While it's baking, I'll be roasting sweet potatoes and parsnips to go with it. To add the green I need with every meal, will be either lightly steamed or raw broccoli. I think I'll probably go for the raw to add texture to the meal. I've already made curried broccoli soup this morning so that's supper for the next few days. The pie will last for at least 3 days too as I ration it out. The urge to eat it all in one sitting is hard to resist. I've been a very good girl this morning so hopefully DH won't notice that the housework still isn't done and that I'm going to sew for a while. He's too excited about the onion pie to notice anything I haven't done. Thanks Donna. Mashed potatoes, mashed in cauliflower, celery root and a turnip a couple of spoonfuls of tofuttie cream cheese to make it creamy. Some coleslaw, fresh fruit and warn corn tortillas, and some chard. Donna I've been smiling lately, dreaming about the world as one. And I believe it could be someday, it's going to come.
