Hi Chris,

I'm in NC but in the Piedmont area. I've got a real good Lentil dish I will look up and send. Glad you are here. Please share some of your favorites. My family is lacto ovo too. Welcome! Robin

Here's one I make about every 2-3 weeks.

Chile Relleno Casserole Serves ~4

2 7-oz. cans whole green chilies

2 15-oz cans beans (any kind)

frozen corn a/o peas, to taste

1/3 # grated cheese (cheddar or any)

16 oz yogurt (any fat level)

3 eggs, beaten

4 Tbs flour

1 tsp chili powder

1 Tbs ground cumin

1 C salsa

 

Split one can of chilies and open flat into ungreased 9x13 pan. Layer as

follows: chilies, beans, corn a/o peas, cheese; then repeat. (My favorite

combo is kidney beans with corn, and then garbanzo beans with peas.)

Mix yogurt, eggs, flour, and spices; beat well. Spread over casserole. Bake

at 350 F for 30 min., or until set. Pour salsa on top. Bake 15 min. more.

Serve with brown rice and warmed tortillas.

Intro/Question

 

Hi, all! My name is Chris and my husband and I have been ovo lacto

vegetarian for just over two years now. We LOVE it and are eating so

much healthier now! We used to be the king and queen of quick fix

pre-packaged dinners! :) Now we're slicing and dicing!!

 

Anyway, I am in search of some bean casserole type dishes. Something

filling, hearty, and hopefully low fat. Quick would be nice, too,

but I certainly don't mind taking some time to make something healthy

and good!

 

Anyone out there from NC?? My husband is stationed in Camp Lejeune

here (Marine Corps). Know of any good restaraunts in the area with

veggie meals??

Greetings to everyone,

I am not sure if this is the group for me but wanted to give it a

try. I started eating raw some years back, but only during the day.

I almost always ate a cooked dinner. I had thought that I would

become more raw with pregnancy, but went in the total opposite

direction eventhogh the pregnancy was totally draing on my body. Now

I have a beautiful six -month old w/eczema all over her face(it was

severly on her back and legs also. but went away when I cleared dairy

out of our systems. I know it is something I'm eating and deep down

I know if not for my own sake, but my daughters', I should transition

to raw.

 

I have always wondered what people do when you have other family

members who just don't want to hear it? Not that they don't get the

benefits, but all raw you've got to be kidding me. I don't want to

say it's hard, but it's hard! As I'm writing this now, I'm

remembering how addicted I used to be to chicken and the expression I

had went a met a vegan for the first time. Well, I transitioned from

that point right?

 

Also, solid foods w/babies. I'm in no hurry, but wondered is there

some sort of timeline for raw babies? I've heard nothing but

beastmilk for 2yrs is that right?

 

Ihave also heard that some people stick with just plain stuff no

dehydrating, no fancy stuff, just good ole fruits and veges. That's

more of my style, but is it doable. I mean I could do smoothies and

things w/ the blender, but do I need to make cookies and patties

etc.?

 

As you can see I have a lot of questions hope I can find my way

through.

Hi Ayana,

 

What a beautiful name! Welcome!!!

 

I wanted to assure that it very possible, easy and pleasant to eat a simpler

raw diet. You can do smoothies and raw soups with a blender and don't

anything more complicated. Fruit and salads are easy and quick and I'm sure

that will be a plus for you with 7 kids! :-)

 

About the family, just keep gently reassuring them that you are following

your instincts and doing what you feel is best for them. Let them know that

you support what they are doing and would appreciate that they support you

in what you are doing. People often feel judged when others around them

start to improve thier diet because they aren't making improvements and deep

down they know they could be eating better and don't want to be confronted

with that. Don't try to change them, just exude confidence and happiness in

your choices and don't take their reactions personally.

Hi Ayana,

 

I'm also new to the group, and I'm so happy to have found all these great raw

food enthusiasts and all their support and suggestions. I can relate to how you

feel about getting the family to embrace the idea of eating raw. I am a cancer

survivor (advanced aggressive breast cancer) and found raw foods to be a major

turning point in my recovery. Talk about the power of your plate! It's amazing

how different I feel from eating raw organic foods. We eat a lot of simple

foods as Audrey has suggested; fruits and nuts, veggies, salads, fresh juices,

smoothies, and green drinks.

 

My husband and kids don't eat a completely raw diet, but I do try to make sure

they get at least 50% to 70% raw. Myself, I try to eat as clean as possible,

because that's what feels best to me. But I fluctuate between 85% to 100% raw.

It would be closer to 100% all the time if I could get the rest of the family to

give up the cooked food altogether, but we're making progress.

 

I'm pretty satisfied with simple eating, so my challenge has been in keeping

it interesting for the rest of the family. I found a great resource for raw

foods that I really love, which has made the process much easier. You can check

out the link below to find out more.

 

I would think that as soon as your baby is ready for solids, you should start

to introduce raw foods then. Just make sure they're mashed or cut

appropriately. As babies, my kids loved peaches, bananas, cantaloupe, avocado,

pears, seeded watermelon, etc.. Once their teeth start coming in, babies love

chewing on things. And if you can start your baby on the good stuff from the

start, what a healthy future she'll have.

 

We all learn to walk before we can run, and there are no hard and fast rules.

Do what feels comfortable for you. Change can be challenging, but as you start

seeing and feeling the benefits of a raw diet, it's SO worth it.

I have a 3 month old daughter who is getting hungrier by the day are

you giving any solids to yours yet? have you given consideration as to

how other family members will feed baby when your not around?
