can asparagus be eaten raw.

i was told that asparagus is only to be eaten cooked.

Anyone ever hear of this?

Asparagus is soooooooo delicious eaten raw! I do like it cooked, but once I

tried it raw...

 

BTW, does anyone know if it's true that carrots need to be peeled, no matter how

they're going to be eaten? I heard or read this quite a few years ago. Thanks.

Any vegetable can be eaten raw as long as you clean it....just wash it good.

Carrots are fine with the peelings....they hold a lot of the vitamins and

minerals in....Kelly

Well, I eat it raw and I'm still alive! It tastes really good

I peel everything that isn't organic but carrots are easy to come by.

I've never heard of that. I grew up on unpeeled carrots.

I don't know about that wiki says that, buckwheat greens, kidney beans (both

raw and sprouted), rhubarb leaves and potatoes are all toxic when when raw. But

are they wrong?

Hi. I don't know about the former three, but potatoes are ok to eat raw. I've

eaten them raw many times, as has my mother. My husband eats them raw about 4

times weekly & has for 40 years. He really loves his potatoes! lol!

Hello,

Rhubarb leaves are definitely toxic, but not the stalks (the stalk is

what you eat when having yummy pie!). There is a compound in the

leaves either related to, or is, cyanide (if I remember correctly).

Makes me wonder because I always used to feed wild rhubarb to my horse

as a kid...not in large quantities enough I guess to make him sick,

thankfully! Again, the rhubarb stalk is fine.

In regards to raw potatoes, they are very high in starch and very

mucous forming, and hence acidic and not the best raw veggie to eat.

Potatoes are one veggie that should be baked before eating - it makes

it taste better plus the cooking breaks down the starch into sugar,

which IS good for you. This doesn't happen in your body, you just get

mucous build up from the starch...that's what the experts say anyway.

 

Anyway, the wiki was more or less correct on those two points, so they

could be on the other ones as well.

Hi Sharon. Now that I've been told differently more than once, & especially

after reading the post about an article or something saying raw potatoes are

toxic (since this isn't true either), I'll start eating them unpeeled. I think

what I read or heard years ago about the unpeeled carrots was the same thing as

with the raw potatos ... carrot peel is toxic or something?

A number of raw foodists say that you can eat potatoes raw, but

recommend grating them, then soaking them, and massaging them, to

remove the starch.

 

I have found that this works reasonably well, as I do not like the

taste of plain raw potatoes, and the soaked/starch-removed potatoes

are more palatable, but I still don't care for them-- could be a

sensitivity, I suppose.

 

Raw sweet potatoes, finely-grated, make a really nice addition to salads.

You're buying ORGANIC carrots, yes?

The " PEEL OR DIE DICTUM " refers to " supermarket " , i.e., non-organic,

vegetables (you mentioned potatoes, as well).

If you are buying ORGANIC, then you needn't peel, and the peel (as we

were taught in the 60s) is good for you and contains most of the

nutrients, or, at least, many nutrients, which you want to have.

 

If you are buying ORGANIC, you can just wash like crazy, and then eat

the whole vegetable. If you are buying non-organic (boo! hiss! oooh!

what other things are you ingesting! Oh heavens!), you should

peel/skin your produce before even considering it to be edible.

 

THE UPSHOT:

1- peel non-organic vegetables.

2- consider considering organic vegetable skins edible

after extensive cleaning (my attitude: what was the fertilizer?

what was the pesticide? -- I know it was organic, but... what was

it? I will wash it off!!!!!!)

Thanks, Margaret. I've been wondering about eating yams raw. They are my new

favourite food! My husband is the real white potato lover in my household. I

might as well talk to the wall as to talk to him about food nutrition, but at

least he's talking about wanting to get away from meat. Never thought I'd see

the day that would happen.
