The sprout has most of the enzymes while the bean has all the protein, and some enzymes and probably lots of other things. Guest guest Posted April 4, 2007 Report Share Posted April 4, 2007 It depends on the bean. Some such as pinto are too bitter to be eaten raw/spouted. The only beans I have found so far that taste good are adzuki, mung and garbanzo. I have heard the white bean with a dark spot, (black eye?) are good. Then most lentils, not the red ones, will sprout and can be used. Is there any special consideration for purchasing garbanzos that will sprout? Will regular grocery store ones in a bag work? I've seen them fresh, like green in pods at the store as well. I don't really care for sprouts a whole lot myself and I'm finding it very difficult to get them to work in my home anyway. I'm sure that I'm just not doing it right, but all the recipes call for things to be soaked for days and then sprouted for days and then prepared to eat. I'm not sure what I'm doing wrong, but nothing is sprouting and the rice I tried this with started to smell really bad even though I was changing the water two to three times a day. Blech! Are you familiar w/Doug Graham's " 80/10/10 Diet " (and book by the same name avail. at www.foodnsport.com)? It's about eating what our bodies are designed for, which is primarily fruit and tender greens. Another idea to consider: things we can't find and pick and eat easily in nature probably aren't our optimal foods. Let me know if you'd like more resources--web sites/discussion groups.
