I believe it's in The Raw Transformation: Energizing Your Life with Living Foods by Wendy Rudell and David Wolfe. Basically, you slice coconut meat into " bacon " strips and marinate the meat in Nama Soyu or Bragg's Amino's. Then you dehydrate the strips until your preferred texture. Personally, I HATE the taste of Bragg's and only use Nama Soyu and Celtic Sea Salt, but Bragg's has a earthy flavor that might work best in this instance.
