BACON 1 large eggplant peeled and thinly sliced lengthwise. I use a very wide veggie peeler to make bacon sized strips. MARINADE: 3 Tablespoons olive oil 1 teaspoon black pepper 2 Tablespoons maple syrip 3 Tablespoons Ume Plum vinegar 2 Tablespoons Apple cider vinegar 2 Tablespoons cider 1 Tablespoon liquid smoke Marinade for 2 or more hours. The last time I marinated it for 6 hours. Spread them out on the teflex and dehydrate for 8 hours and then turn the " bacon " and dry another 8 hours until oily/crispy. The BEST to use and even to drink daily for optimal health and increased HCL is RAW UNFILTERED APPLE CIDER VINEGAR (with the " mother " ). Braggs even makes one. SUPER good for you! As far as the Ume Plum Vinegar in this (and even the Liquid Smoke), it's really just a matter of a TBSP here or there, in the marinade only. And the Ume Plum Vinegar should be FINE. Guest guest Posted April 28, 2007 Report Share Posted April 28, 2007 Before I got the recipe, I let the eggplant sit in a mixture of lemon juice, nama shoyu, paprika and a little agave. I could have cut out the agave. And as for the recipe, there are some people who have a really difficult time transitioning into the raw lifestyle. I was one of those people. If you make the recipe knowing that you might not eat it for the rest of your life, I think that's ok. And I guess even if you did eat it for the rest of your life, it gives people a better alternative than what they were probably eating before. I may be wrong, but I think that's the point of these recipes and others that I have found in raw cookbooks that have some " non-raw " ingredients. You make some of these things in the beginning and after a while, you naturally give them up for simpler foods. Thanks! For instance, you can use a raw sweetener and I'm going to try it with a little raw tamari (Forgot what its called) with a little raw apple cyder vinegar. Guest guest Posted April 28, 2007 Report Share Posted April 28, 2007 Cashews, Braggs, agave nectar, psyllium powder, frozen corn, organic vanilla extract and more are not raw either. Most organic vegetables are not " organic " as over 50% still are sprayed with pesticides. It's all where you want to take it, but considering that you use about 1 tbsp Liquid Smoke per 50 slices of bacon, even my super strict friend who gave me the recipe uses it! I would NOT say that it is not a raw recipe, though, because it IS a raw recipe (unless you want to eliminate over 50% of the raw recipes out there!) According to David Wolfe, an expert, all the young coconuts in the states are pretty rancid, and therefore unhealthy no matter how supposedly " raw " (p.s. we will never know for sure with those things). It's not really about percentages, though, it's the whole picture. I think people miss the boat when they declare a whole recipe " not raw " because of 2 small elements, honestly.
