Raw Food Potluck

June 9, 2007 (6:00 pm - 10:00 pm)

Where: Kensington Market Lofts, 21 Nassau St

 

This is a raw food potluck organised by the Raw Food Toronto , the

raw food meetup and the Raw Food TVA groups.

 

It is held on the second Saturday of each month in the party room of the

Kensington Market Lofts condo in Kensington Market in downtown Toronto.

 

Show up anytime after 6pm; we'll start eating around 7pm.

share secrets from her book Cook Once a Week, Eat Well Every Day for getting it

Better Spaghetti Sauce and Baked Mashed Potatoes from her book as a vehicle to

teach efficiency. Her belief is simple…that it only takes one cooking session

and simple knowledge on how to stretch these meals into second suppers using the

" leftovers. " You need not waste time, money or sanity ever again!

In this presentation, you will learn about a break-through treatment that

blueberry pie

Crust

1 c. almonds (soaked makes a much moister crust; if you want them to help soak

up moisture from the filling, then the filling won't be so runny, you can soak

and dehydrate before using.)

1 c. medjool dates

 

Layer

large handful blueberries

 

Filling

rest of a pint of blueberries (after handful removed)

1/4 c. coconut

1/4 c. pine nuts

1 T. lemon

 

To make crust, process almonds and dates. Press into pie dish. You can either

dehydrate it or leave as is.

Arrange blueberries on top of the crust for a layer between the crust and the

filling. To make the filling, process all ingredients until smooth and pour over

blueberries/crust.

 

(You can substitute any fruit for the blueberries.)

***Comments:

I add 3 Tbl maple syrup to the crust mixture, as the dates and nuts alone

weren't enough to make a pressable crust - but then again I was using unsoaked

almonds this time. I used finely shredded dry unsweetened coconut for the

filling and I topped the pie with a handful of " fat " chopped dry unsweetened

coconut for garnish. I didn't have any dates for the optional ingredient in the

filling, but it wasn't sweet enough for me as it was, so I added 1 Tbl maple

syrup to the mixture. This pie is delicious!! Absolutely delicious. - Michelle

BASE

rice millet Manna Essenne bread

walnuts

sunflower seeds

dates soaked in charged water 2 hours

 

FILLING

blueberries, cherries & raspberries: chopped up a bit (so the consistency

becomes chunky)

 

CREAM

almonds ground into a flour with maple syrup & coconut oil: whipped in blender

 

Run the BASE ingredients through a Champion juicer with the homogenizing piece

removed. It should be blended yet fluffy rather than pasty. Press into pie

shells. Chop up the FILLING fruits and smear onto the BASE. Whip up the CREAM

in a blender, remembering to first grind the almonds to a flour. Top cake with

dollops of CREAM. Garnish with dried sweetened cranberries.
