I ask because: (1) we need to know the direction, not just a snapshot, and (2) what the medical world says is a deficiency may not, in fact, be a deficiency at all ... in a more healthy person than they study. 2. How physically active are you? 3. How heavy/long are your monthly periods? The diet you consume is quite a bit different from the diet I describe. A person can only consume so many calories, at a given level of physical activity, and maintain a steady body weight and body composition. The more calories one consumes as starch and fat, the less calories one CAN consume as high water-content foods. And since the vast majority of our nutrients .... including iron ... are either water soluble or water transportable, when you eat as you describe, you will definitely undernourish yourself in many ways.
