What is a generous portion of greens? # Ingredients in a Salad; Scallions (WAS: Enough B vitamins? ...)

Hi Lynne,

 

probably eat a fairly large head of lettuce (or a mix from several

heads/varieties) most days ... about a pound, give or take. My sense is that

you are eating closer to 1/2 pound. I may add a small amount of bitter

greens 5 times per year (e.g., arugula). I cannot remember when I last ate

spinach ... definitely not this year! Does that help?

 

Until and unless you wish to commit pretty fully to the monomeals idea, a

salad with 2-5 or even 6 well-combined ingredients is fine ... I mean,

compare with what we all USED to eat!!!

 

Scallions are onions, you'll not likely find any garlic or onions in any of

Doug's recipes! :)

Would you be able to elaborate on what a generous portion of

organic-or-better greens would be? I " m not at all sure that I'm getting

enough greens, since I only eat one salad a day at dinner, and usually there

is only about 1/2 head of romaine or red leaf lettuce in it. Should I be

eating more spinach leaves? Plus, I have another question. I usually

include red or yellow peppers, some scallions, cucumbers, and sometimes

tomatoes in the salads that I make daily. Would that be too many

ingredients. I did notice that none of the recipes in Doug Graham's book

includes scallions! Thanks, Lynne

 

Sounds like you are doing great. B refers to a collection of vitamins and

substances once labeled as vitamins but later reclassified. As long as you

include a generous portion of organic-or-better greens in your program, you

should be fine.

Wow, I thought spinach would be considered a tender green. It also

seems that spinach contains a lot of nutrients.

I am suprised you don't eat it much.

 

What kind of greens do you eat?

 

1 lb? That is a lot of tender greens. I buy bags of mixed baby

greens. It would take several bags to equal a pound.

We both LOVE arugula! I will start adding that to our salads and

increase my consumption of greens!

It can be any bitter green, arugula is only one of many. But please note

that I'm eating that in times per year, not times per week or even per

month. Again, that's just my own program ... to each his own, of course.

Does your body really benefit from eating anything so rarely?
