Hi Belinda, they don't actually go soggy, I assume because of the oils and fibre. I was actually able to peel my almonds after soaking them, which made them taste a LOT better, and much smoother and creamier (I don't eat nuts very often, so have only done that once). I love almonds but they are so hard, it is almost like trying to eat rocks. Are your almonds raw? I've had some that were either dehydrated, or cooked somehow, and they were very hard. The raw, pesticide-free ones (can't afford the organic ones) aren't nearly as hard, though some that have dried out, in the same bag, can be a bit harder than the rest. According to the experts, we should always soak our nuts and seeds, in order to allow them to release the enzymes they contain. In the case of harder nuts, it makes them easier to eat, as well. As a chewing impaired person, I like to soak my almonds, and, if I am not going to eat them right away, put them in the dehydrator, sometimes with some herbs or spices sprinkled on them.
