Hi Anna, I wrote most of this some time ago, and it's sitting in my Drafts

folder. My backlog cleanup continues ...

____________

Yes, Anna, I believe you've got it.

Almost the entire population is protein poisoned ... severely so. The

problem is that most of the protein they consume is denatured and therefore

nonviable ... which means " incapable of supporting life " . Therefore, they

must consume more, and more, and more ... in a desperate effort to extract

enough viable protein to live on. Meanwhile, the body interprets all that

excess as foreign matter (trash) ... a VERY acidic trash ... which it must

eliminate. This is the primary cause of chronic leaching of calcium and

other alkaline-forming minerals from the body (eventually osteoporosis), as

well as a major cause of calcification deposits throughout the body

(eventually heart attack, other heart diseases, stroke, arthritis, among

other things).

Part of the beauty of the 80/10/10 approach, from my perspective, is that it

encapsulates low protein AND low fat AND low starch (though (I'm not

commenting on fat or starch here, have in various other posts). But low

protein only works when we consume high-quality protein. By this, I mean

first, protein that has not been denatured by heating, second, low-acid

protein, such as that typically found in plant-based foods, and third,

protein that is not tarnished by growth hormones, antibiotics, pesticides,

etc.

So here is a point for clarity:

Building lean tissue, muscle, bone, cartilage, etc., leads the body to

elevate circulation somewhat, PER UNIT OF TISSUE. The weight loss marketers

yap about this incessantly. But because the tissue is LEAN, there is less of

it than there is on a body filled with fatty tissue. This is one reason why

I have repeatedly suggested letting go of all weight-loss goals. We serve

ourselves much better by using a goal that is more stable (changes more

slowly over time) and that genuinely reflects the composition of our body.

Such a goal would be expressed in terms of percent of body fat, not body

weight.

We build lean tissue through activity, not by eating. Body builders all know

this ... they spend their time in the gym, not in the kitchen, for precisely

this reason.

Countless studies ... EVEN THE US GOVERNMENT'S RECOMMENDATIONS ... indicate

there is no benefit, and considerable potential harm from increasing the

PERCENTAGE of protein in one's diet while exercising heavily. In fact, as

one burns more calories, one eats more, and therefore one quite naturally

consumes a larger amount ... but NOT a larger percent ... of calories from

protein. To do otherwise poisons the system.

And regarding your question about increased white blood cell counts in

response to eating cooked foods, this is called " digestive leukocytosis " and

was first identified by various researchers, during the 1920s as I recall.

One researcher in particular, Dr. Paul Kouchakoff, conducted some SMALL

studies to observe the effects of eating raw vs. cooked foods on white cell

counts. He did observe elevated white cell counts when cooked foods were

consumed ... and many RF teachers have been taught this and spread it around

like you-know-what. But his research went farther: he would give someone a

raw portion of food X, then follow with a cooked portion of food X. And he

found that, when he hit the " right " numbers for the each food, digestive

leukocytosis did not seem to occur.

Kouchakoff's research was fairly minimal, only 2 papers were published

(1930, 1937, the latter in French), and to my knowledge no one has ever

picked up on his work and tried to reproduce it, expand upon it, etc. This

is " on my list " of future primary research projects. Meanwhile, many claims

are made, largely by those who never read Kouchakoff's second paper on the

matter. Most of the raw foodist claims arising from his work are overstated,

at the very least.

Best,

Elchanan

Re: [Raw Food] Resting heart rate

right....

arent we told that eating protein increases our metabolism thus sweating

while eating is " normal " or actually " good " ??

ive read that many times...

so in reality its the body defending itself? Thats freaking incredible..

and as for white blood cell counts....cooked food increases it hugely..white

blood cells running around attack joints etc....another contributor to

arthritis and inflamation in the body...

am i getting this right?
