Guest guest Posted October 1, 2006 Report Share Posted October 1, 2006 Tofu and Spinach Soup Source: 3abn.org 1 8-oz. package fresh spinach 1 container firm Mori-Nu tofu 2 Tbsp. peanut oil 1/2 tsp. sea salt 2 1/2 c. water 2 Tbsp. light soy sauce 1 tsp. toasted sesame oil 1. Wash the spinach well, discarding the tough and discolored leaves. Shake off the excess water and cut the leaves into small pieces. 2. Cut the tofu into about sixteen cubes. 3. In a wok, heat the peanut oil until hot. Stir-fry the spinach until soft. Add salt and water and bring to a boil. 4. Add the tofu cubes and soy sauce and cook for 2 minutes. Yes, it's important to be careful about soy sauce. Wheat Free Tamari and/or Bragg's Liquid Aminos are excellent alternatives. There are also a few brands of soy sauce available that are wheat free, but they are not easy to find in most markets. There are a few brands that use corn instead of wheat. It is always best to read labels every time you purchase something. In my experience, the " light " versions of soy sauce rarely use wheat. Bragg's liquid aminos can generally be subbed for soy sauce.
