Egg Yolk Substitute

Source: Ten Talents

 

*used for binding*

 

1 part soy flour plus 2 parts water

 

Mix soy flour with water in blender until very thick. Double boil 1 hour. With

egg beater, whip in:

 

2 Tbsp. oil

1/4 tsp. salt

 

for each cup of soy flour mix. Store in refridgerator. Will get very thick

when cold. Use 2 or 3 spoonsfuls as binder for loaves, patties, cookies.

Cannot be used as a leavening agent (use a commercial egg replacer for leavening

substitute)

I get sick when I eat eggs. My Dr. says that it is highly unusual to

develop an allergy to eggs as an adult. What's up with the egg yolk

elimination?

Hi Rex,

 

In addition to being a gluten free , we are also a vegan

group --- therefore, no animal products (meat, dairy, cheese, eggs, etc.).

So, that's why the recipe for the egg yolk substitute. :)

I was just reading on the doctorj.com website that egg sensitivities are quite

common, but are secondary to other intolerances. I like his site. Thanks to

whomever posted the link yesterday. I am just trying to learn all about this

stuff!

i don't think i looked at this recipe properly before... is that

correct, that you double-boil for one hour? seems like a v v long time.

has anybody tried it and used it? how was it?
