Guest guest Posted October 17, 2003 Report Share Posted October 17, 2003 Hi Suzanne, My favorite butter-type spread is Earth Balance. It's made of all natural oils that aren't hydrogenated. It tastes almost exactly like butter to me and it works just as well for baking. I find it at Trader Joes, but you should be able to find it in any natural foods store. As for the soy milk, Silk is probably the brand most of my friends like when I cook for them (they aren't vegetarian and don't normally use dairy subs). Be sure to get the original flavor or unsweetened if you are using like milk in cooking. Vanilla works great in baking or pancakes. Also, there are some fabulous nut milks available. I love almond milk. Also I was wondering if people knew which of the commercial soy milks had the least " beanie " taste?? I have been using Soy Milk for a while in cereal (which fortunately was a real good simple transition for myself and the family), but recently started to experiment with it in cooking. So far I have definitely tasted the soy milk in the dishes which overpowered some of the recipes, in my opinion. So if you would, please let me know which one works for you in cooking. The best by far is EARTH BALANCE Natural Buttery Spread. It is NON- GMO and Non-partially hydrogenated and has the best flavor!! Guest guest Posted November 29, 2006 Report Share Posted November 29, 2006 hi everybody i've been working on the soy butter recipe in the files (all the vegan margarine here has hydrogenated oil in it), and have found it works really well with palm shortening instead of coconut oil (the coconut oil gave it a very unpleasant flavour, i thought) and with double the suggested amount of soya milk (to make it set not so hard). used it in a cake today and it worked really well, hooray! regards alice Quote Link to comment Share on other sites More sharing options...
