Guest guest Posted December 3, 2006 Report Share Posted December 3, 2006 Tamale Pie Source: Tastefully Vegan Filling: 2 cups onion, chopped 1/2 cup green or red bell peppers, chopped 2 Tbsp. olive oil 1/2 cup tofu or soy burger* 2 oz. Old El Paso ® mild green chilies, chopped 2 cups canned beans, any combination of kidney, black and pinto beans 1 cup cut corn 15 oz. canned tomatoes, diced 2 tsp. Chili Powder 1 tsp. vegan 'beef-style' seasoning 1/2 tsp. cumin 1/2 tsp. onion salt 1/2 cup soy cheese, grated (optional) 1/4 cup black olives, sliced Saute onions and bell peppers in olive oil until tender. Stir in burger and chilies. Add the beans, corn and tomatoes and mix well. Add the chili powder, beef-style seasoning, cumin and onion salt, stir until mixture begins to simmer and remove from heat. The cheese and olives will be added later. * tofu or soy burger is available at Walmart Crust: 2 1/2 cups cold water 1 1/2 cups yellow corn meal 2 oz. Old El Paso® mild green chilies, chopped 1 1/2 tsp. chili powder 1 tsp. salt In a non-stick saucepan, combine above ingredients and bring to a boil, stirring constantly. Reduce eat, simmer and stir frequently until thick and sides pull away from the pan, about 5 minutes. Coat a 10 inch deep dish pie pan with no-stick cooking spray and pour about 2/3 of the corn meal mixture into the bottom of the pan. Spray a rubber spatula with no-stick cooking spray and press mixture over the bottom and sides of the pan. Pour filling into the pie pan and level. Sprinkle (optional) grated soy cheese over the filling. Top with slced black olives. Drop remaining corn meal evenly over the filling and with fingers gently spread crust out to the edges. Funny how tastebuds change over time, huh. I'm sure the olive oil wouldn't be missed either. If you can't find 'beef style' seasoning that's vegan and gluten free, you can use gf tamari or soy sauce --- or Bragg's Liquid Aminos -- and it should taste just as good.
